I actually agree with Dean Ornish when he says certain people have protection against saturated fats and cholesterol. However, I wouldn’t say it’s really protection, but more like their genes are adapted to a diet high in saturated fat and cholesterol.
I think the reason why nutritional science is such a mess, why so many nutrition studies are inconclusive and why we can’t clearly link certain macronutrients to disease is because of the huge amount of genetic variability between people.
One man’s food is another man’s poison.
Fat is good if you have the right genes for it. Protein is good if you have the right genes for it. Carbs are good if you have the right genes for them.
So what is not good? What should you eat and what shouldn’t you eat?
Well, it depends. But what I can say for sure, is that no one has genetic adaptations to modern processed food. Therefore it is highly unlikely that any form of modern processed food is ever going to be good for you.
